Chia is traded as black, white or mixed whole seeds and in milled or extracted forms. Whole chia develops a gel-like texture when hydrated, a characteristic relevant to recipe development and processing.
Food industry applications
Whole seeds suit puddings, cereals, breads and bars. Milled chia serves different texture requirements; protein ingredients and oil must be specified separately rather than assumed equivalent to whole seed.

Do I need the same specification for whole and milled chia?
No. Whole seed purity and colour are different purchasing criteria from flour particle size and processing. Request the exact product composition and storage specification for the selected form.
